Good cooking needs fresh ingredients. It’s that simple. Fresh ingredients have the best quality, the deepest flavour, the richest aroma - they just work. Freshly picked, summer strawberries or air-freighted December ones? No contest. The freshest ingredients, by definition, are those that are a) in season and b) the least-travelled.
Our menus are dictated by the seasons. We get ridiculously excited when the first heather-fed lamb arrives in June or our local forager appears with a trug of autumn mushrooms. And we can’t wait to tell you about it! Read on.
